Baked Sweet Potatoes with Black Beans and Hummus
Ingredients
- 2 medium sweet potatoes
- Juice of 1/2 medium lime
- 1/2 teaspoon cinnamon
- 1/2 teaspoon cumin
- 1 (19 oz) can black beans
- 12 cherry tomatoes
- 2-3 green onions
- Sriracha, to taste
Dilly hummus
- 1/2 cup hummus
- 2-4 cloves garlic
- Juice of 1/2 medium lemon
- 1/4 teaspoon maple syrup
- 1-2 tablespoons fresh dill
- 1-2 tablespoons water or plant-based milk
Preparation
Cut the sweet potatoes in half and toss with lime juice, cinnamon, and cumin, then bake until tender.
Mix the dilly hummus ingredients together and thin with water or plant-based milk as needed.
Drain and rinse the black beans.
Halve the cherry tomatoes and slice the green onions.
Top the baked sweet potatoes with black beans, cherry tomatoes, green onions, dilly hummus, and sriracha to taste.
