Baked Sweet Potatoes with Toppings
Ingredients
- 2 medium sweet potatoes
- Juice of 1/2 medium lime
- 1/2 teaspoon cinnamon
- 1/2 teaspoon cumin
- 19 ounce can black beans
- 12 cherry tomatoes
- 2-3 green onions
- Roasted chickpeas (optional)
- Guacamole (optional)
- Sriracha (optional)
Dilly hummus
- 1/2 cup hummus
- 2-4 cloves garlic
- Juice of 1/2 medium lemon
- 1/4 teaspoon maple syrup
- 1-2 tablespoons fresh dill
- 1-2 tablespoons water or plant-based milk
Preparation
Preheat oven to 400°F and bake sweet potato halves seasoned with cinnamon and cumin until tender.
Combine hummus, garlic, lemon juice, maple syrup, dill, and water or milk to make dilly hummus, adjusting consistency as needed.
Drain and rinse black beans.
Halve cherry tomatoes and slice green onions.
Assemble by topping baked sweet potatoes with black beans, dilly hummus, tomatoes, green onions, and optional guacamole and sriracha.
