Sweet Chili Black Beans

Ingredients

  • 1/2 onion, diced
  • 2 cloves garlic, minced
  • 1/2 red bell pepper, diced
  • 1 can black beans, rinsed and drained well
  • 1 1/2 tbsp tamari
  • 1 tbsp sweet chili sauce
  • Pinch of ginger
  • Pinch of five spice
  • Pinch of red pepper flakes
  • Juice of half a lime

Preparation

  1. Sauté the onion, garlic, and bell pepper in a pan until the onion has softened.

  2. Add the black beans and stir to combine, then add the tamari and sweet chili sauce.

  3. Sprinkle in the ginger, five spice, and red pepper flakes, and adjust flavor as desired.

  4. Add the lime juice and serve.

Tips

  1. This dish is simple and great for lunch.

  2. You can meal prep by roasting sweet potatoes separately and stuffing them with the bean mixture as desired.
