Vegan Sweet Potato and Greens Bowl

Ingredients

  • sweet potato
  • olive oil
  • salt
  • pepper
  • broccoli
  • kale
  • coconut oil
  • avocado
  • hummus
  • sesame seeds

Preparation

  1. Slice and roast the sweet potato with olive oil, salt, and pepper at 160°C for 45 minutes.

  2. Wok fry the broccoli and kale in coconut oil.

  3. Serve with avocado, hummus, and sesame seeds.
