Vegan Lunch Bowl with Roasted Vegetables

Ingredients

  • sweet potato
  • olive oil
  • salt
  • pepper
  • broccoli
  • kale
  • coconut oil
  • avocado
  • hummus
  • sesame seeds

Preparation

  1. Slice and roast sweet potato with olive oil, salt and pepper for 45 minutes at 160 degrees.

  2. Wok fry broccoli and kale in coconut oil.

  3. Serve with avocado, hummus, and sesame seeds.
