Vegan Bagel with Avocado and Mushrooms

Ingredients

  • Whole-wheat bagels
  • 200g brown mushrooms
  • 1 avocado
  • Cherry tomatoes
  • Garden cress
  • Pine nuts
  • Olive oil
  • Soy sauce
  • Salt
  • Pepper

Preparation

  1. Fry the mushrooms in olive oil and soy sauce until cooked

  2. Prepare the avocado by mashing or slicing and seasoning with salt, pepper, and olive oil

  3. Toast the bagels if desired

  4. Assemble the bagel by adding the prepared avocado, fried mushrooms, cherry tomatoes, garden cress, and pine nuts on top
