Tempeh Bacon with Maple and Soy Marinade

Ingredients

  • 225g (8oz) tempeh, thinly sliced
  • 20ml (1 tbsp) maple syrup
  • 30ml (2 tbsp) soy sauce
  • 15ml (1 tbsp) olive oil
  • 2 ml (1/2 tsp) liquid smoke
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1/2 tsp ground cumin
  • 1/4 tsp salt

Preparation

  1. Place sliced tempeh in a baking dish. Whisk together the rest of the ingredients and pour the marinade over the tempeh. Set it aside to marinate while you preheat the oven.

  2. Preheat the oven to 180C/350F. When the oven is hot, arrange tempeh in a single layer on a baking tray. Bake for 15 minutes, flip, and bake another 7-10 minutes until dark and crisped.

  3. Assemble in a sandwich with some lettuce, sliced tomato and your favourite brand of vegan mayo. You can enjoy this without any sauce too.
