Creamy Spinach Pasta with Fresh Tomatoes and Roasted Pine Nuts
Ingredients
- 5 oz dried pasta
- 1/2 tbsp olive oil
- 2 garlic cloves, chopped
- 1 onion, chopped
- 4 cups fresh spinach leaves
- salt, pepper to taste
- 1 tbsp lemon juice
- 4 tbsp pine nuts
- 1 cup cherry tomatoes
Preparation
Cook pasta and drain
Heat the oil in a pan
Sauté onion and garlic for 1-2 minutes
Blend sautéed onion + garlic with spinach, vegan cream cheese (or cashews)
Add salt, pepper & lemon juice to taste (+ a sip of plant-based milk, if desired)
Roast pine nuts in a new pan without oil
Combine pasta with sauce and serve with pine nuts & fresh cherry tomatoes
