Avocado Toast with Sautéed Mushrooms and Garlic

Ingredients

  • 1 tsp olive oil
  • 10 ounces white mushrooms, sliced
  • 4 cloves garlic, crushed
  • 1 large avocado
  • 4 slices whole wheat or other bread
  • Salt and freshly ground black pepper
  • Red chili flakes (optional)

Preparation

  1. Heat the olive oil in a skillet over medium high heat.

  2. Add the mushrooms and cook until they start to turn golden brown, about 5 minutes, turning them part way through.

  3. Add the crushed garlic to the mushrooms, stir to combine, and continue to cook for 1 minute.

  4. Remove the mushrooms from the heat.

  5. Meanwhile, toast the bread.

  6. Mash 1/4 avocado onto each slice of toast.

  7. Place 1/4 of the cooked mushrooms on top of each slice of avocado toast.

  8. Sprinkle with a little salt, some freshly ground black pepper, and a few chili flakes if you like heat.
