Avocado and Pink Hummus Toast

Ingredients

  • 1 can boiled chickpeas
  • 1 can or 1/2 jar preboiled and precut beetroot
  • salt
  • olive oil
  • 1 tablespoon tahini
  • lemon juice to taste (optional)
  • bread slices
  • avocado

Preparation

  1. Strain, wash and blend the chickpeas, beetroot, salt, olive oil, tahini and lemon juice until creamy

  2. Add some cold water if needed to achieve the desired consistency

  3. Toast the bread slices

  4. Spread the pink hummus on the toasted bread

  5. Top with avocado slices
