Hearty Vegan Shepherd's Pie Dish
Ingredients
- 2 medium potatoes
- 2 medium carrots
- 1 medium onion
- 2 cloves of garlic
- 1 cup frozen peas
- 1 cup of lentils
- 1 cup vegetable broth
- 1 tablespoon tomato paste
- 1 tablespoon olive oil
- 1 teaspoon thyme
- 1 teaspoon rosemary
- Salt and pepper to taste
Preparation
Boil potatoes until soft, then mash them with a little seasoning
Heat olive oil in a pan and sauté chopped onion and minced garlic until fragrant
Add diced carrots and cook for a few minutes
Stir in lentils, vegetable broth, tomato paste, thyme, rosemary, salt, and pepper
Simmer the mixture until lentils are tender, then add frozen peas and cook briefly
Transfer the filling to a baking dish
Spread the mashed potatoes evenly over the filling
Bake in a preheated oven at 375°F until the top is golden and crispy
