Easy Vegan Pumpkin Soup

Ingredients

  • 1 medium-sized Hokkaido squash
  • 3 small potatoes
  • 1 small apple, peeled and chopped
  • 1/4 onion
  • 1/2 garlic clove
  • 2 tablespoons olive oil
  • 1-2 teaspoons vegetable broth
  • Salt and pepper to taste

Preparation

  1. Add oil, onions, garlic, and apple to a big pot and sauté for a short time.

  2. Add water and cook the potatoes and squash until soft.

  3. Add salt, pepper, and vegetable broth to taste.

  4. Mix everything together and cook for a bit longer.

  5. Use a hand mixer to blend into a smooth soup consistency.

  6. Serve with a sprinkle of cinnamon on top.
