Easy Vegan Pumpkin Soup
Ingredients
- 1 medium-sized Hokkaido squash
- 3 small potatoes
- 1 small apple, peeled and chopped
- 1/4 onion
- 1/2 garlic clove
- 2 tablespoons olive oil
- 1-2 teaspoons vegetable broth
- Salt and pepper to taste
Preparation
Add oil, onions, garlic, and apple to a big pot and sauté for a short time.
Add water and cook the potatoes and squash until soft.
Add salt, pepper, and vegetable broth to taste.
Mix everything together and cook for a bit longer.
Use a hand mixer to blend into a smooth soup consistency.
Serve with a sprinkle of cinnamon on top.
