Easy and Comforting Sweetcorn Soup

Ingredients

  • 1 tbsp olive oil
  • 2 medium potatoes peeled and chopped into small cubes
  • 1 onion, chopped
  • 1 clove garlic, grated
  • 5 cups water
  • 1 vegetable stock cube
  • 3 cups sweetcorn, drained
  • 1/2 cup extra sweetcorn for the top
  • salt and pepper
  • chilli oil to serve
  • chives to serve

Preparation

  1. Put a large pan over medium to high heat. Add the olive oil with the potato and onion and cook for about ten minutes. Add the garlic and cook for another minute.

  2. Add the water and veg stock, bring to a simmer and cook for 10 minutes or until the potato is tender.

  3. Add the sweetcorn and cook for another 15 minutes. Blend till smooth. You can do this with a stick blender or food processor.

  4. Add the extra sweetcorn.

  5. Season well with salt and pepper.

  6. Serve with chilli oil and chives.

Tips

  1. Two 340g cans of sweetcorn are enough for both the 3 cups and 1/2 cup extra sweetcorn.
