Easy Vegan Vegetable Soup

Ingredients

  • 2 tbsp olive oil
  • 1 onion
  • 2 cloves of garlic
  • 5-6 smaller mushrooms
  • 3-4 fresh sage leaves (or 1 tsp dry)
  • 1 tsp of thyme
  • 1 liter of water
  • 1 large carrot
  • 1 medium potato
  • 1-2 tsp salt
  • 1 tsp black pepper
  • 1/2 tsp white pepper
  • 1 tsp garlic powder
  • 1 cup of soy milk
  • 1 medium broccoli bunch
  • 1 cup of cooked peas
  • 1/3 cup of couscous

Preparation

  1. Sauté onion, garlic and mushrooms seasoned with thyme and sage in olive oil for 5 minutes.

  2. Add water, chopped carrot and potato. Season with salt and pepper and cook for 15 minutes.

  3. Take out 4-5 ladles of the soup, blend it and pour back into the pot.

  4. Add broccoli, season with white pepper and garlic powder. Add soy milk and cook for 5 minutes.

  5. Add cooked peas, taste the soup and add more seasoning if needed.

  6. Turn off the heat, add couscous, stir, cover and let sit for 10 minutes before serving.

Serving suggestions

  1. Optionally serve with croutons and fresh parsley.
