Ukrainian Beet Vegetable Soup
Ingredients
- 1 large carrot shredded
- 1 large turnip shredded
- 1 large onion diced or shredded
- 4 beets cooked and shredded
- 3 garlic cloves shredded
- Water
- 1 cup passata
- 1 tablespoon white vinegar
- Salt and pepper
- Olive oil
Preparation
Sauté onion in olive oil in a large pot for 5 minutes
Add carrot and turnip, salt and pepper, and sauté for another 10 minutes
Add water enough to fill your pot three-quarters of the way, around 6 to 8 cups, bring to a boil and cook for 20 minutes
Add tomato passata, vinegar, beets and garlic, and simmer for another 20 minutes
Tips
Highly recommend shredding everything using a food processor to save time
Option to serve with a dollop of sour cream or Greek yogurt
