Ukrainian Beet Vegetable Soup

Ingredients

  • 1 large carrot shredded
  • 1 large turnip shredded
  • 1 large onion diced or shredded
  • 4 beets cooked and shredded
  • 3 garlic cloves shredded
  • Water
  • 1 cup passata
  • 1 tablespoon white vinegar
  • Salt and pepper
  • Olive oil

Preparation

  1. Sauté onion in olive oil in a large pot for 5 minutes

  2. Add carrot and turnip, salt and pepper, and sauté for another 10 minutes

  3. Add water enough to fill your pot three-quarters of the way, around 6 to 8 cups, bring to a boil and cook for 20 minutes

  4. Add tomato passata, vinegar, beets and garlic, and simmer for another 20 minutes

Tips

  1. Highly recommend shredding everything using a food processor to save time

  2. Option to serve with a dollop of sour cream or Greek yogurt
