Vegan Creamy Potato Soup
Ingredients
- 1 white onion
- 3-4 garlic cloves
- 2 tbsp vegan butter
- 400 g potatoes
- 1 l vegetable broth
- 1/2 teaspoon dried marjoram
- 200ml vegan cream
- salt and pepper
Preparation
Peel and finely chop the onion and garlic.
Wash, peel and dice the potatoes.
Heat up some vegan butter in a saucepan and sauté the onion and garlic until translucent.
Add the potatoes and roast them briefly.
Add the vegetable broth and bring to boil.
Cook for about 20 minutes until the potatoes are soft.
Add vegan cream and cook for another 5 minutes.
Mix the soup with a hand blender, add marjoram and season with salt and pepper.
Serving suggestions
Serve with some garlic bread or toppings of your choice.
