Homemade Turkish Lentil Köfte

Ingredients

  • 1 cup red lentils
  • 1 1/2 cup fine bulgur wheat
  • 3 cups water
  • 3 Tbsp olive oil
  • 1 large onion
  • 50 g tomato paste
  • 25 g Turkish red pepper paste
  • 1 1/2 tsp ground cumin
  • bunch spring onions
  • bunch parsley
  • salt and pepper
  • 3 tbsp pomegranate molasses
  • juice of 1 lemon
  • 1 tomato

Preparation

  1. Add the lentils and water to a pot.

  2. Bring to a boil.

  3. Put a lid on it, turn the heat down to low and leave to simmer until the lentils are completely cooked, 20-25 minutes.

  4. Take off the heat, add the bulgur and mix well.

  5. Put the lid back on and leave to cool.

  6. Meanwhile chop all the vegetables and sauté onion.

  7. Add all ingredients to lentil and bulgur mixture and mix with your hands until you get sticky, red consistency.

  8. Form little balls and serve with lemon juice
