Hummus + Pita
Ingredients
- 2 garlic cloves
- Juice from 1 lemon
- 1/4 cup (60ml) smooth, runny tahini
- 1/2 cup (120ml) water
- 1/2 date
- 2 cans chickpeas, drained and rinsed
- 1-2 tbsp extra virgin olive oil
- Sea salt & black pepper, to taste
Preparation
Add the garlic, lemon juice, tahini, water and date to a (high-speed) blender or food processor. Blend until smooth and foamy
Add in the chickpeas and blend again, pouring the olive oil in slowly as you go
Season with salt & pepper
Serve topped with crispy chickpeas, cherry tomatoes, parsley, paprika, olive oil and fresh pita bread
