Hummus + Pita

Ingredients

  • 2 garlic cloves
  • Juice from 1 lemon
  • 1/4 cup (60ml) smooth, runny tahini
  • 1/2 cup (120ml) water
  • 1/2 date
  • 2 cans chickpeas, drained and rinsed
  • 1-2 tbsp extra virgin olive oil
  • Sea salt & black pepper, to taste

Preparation

  1. Add the garlic, lemon juice, tahini, water and date to a (high-speed) blender or food processor. Blend until smooth and foamy

  2. Add in the chickpeas and blend again, pouring the olive oil in slowly as you go

  3. Season with salt & pepper

  4. Serve topped with crispy chickpeas, cherry tomatoes, parsley, paprika, olive oil and fresh pita bread
