Naturally Purple Vegan Waffles
Ingredients
- 1 Stokes potato, peeled and cubed
- 4 cups water
- 1 1/2 cups rice flour
- 1/2 cup firm tofu
- 1 1/4 cups non-dairy milk
- 1 tsp vanilla
- 1/4 cup pure maple syrup
- 2 tsp baking powder
- 1/4 tsp salt
- 2 tablespoons purple syrup
Purple syrup
- 1 cup purple water (reserved from potato boiling)
- 1 cup sugar or 1 cup pure maple syrup
Preparation
Boil the potato in the water for 10 minutes. Drain but save 1 cup of the purple water.
Mash the potato in a glass, plastic, or ceramic bowl. Not metal because it'll actually change your purple color to a blue. Whisk in the other ingredients.
Make your purple syrup by simmering the purple water with 1 cup sugar or pure maple syrup for 5 minutes. Store it in a glass Mason jar to pour on the waffles or to use as a natural food coloring. It'll get thicker as it cools.
Pour 1/3 cup batter on an oiled waffle maker and cook for 8 minutes. It'll seem very soft right off the waffle maker, but it'll firm up if you store it in a 200°F oven while you make the rest. This makes about 8 waffles.
