Naturally Purple Vegan Waffles

Ingredients

  • 1 Stokes potato, peeled and cubed
  • 4 cups water
  • 1 1/2 cups rice flour
  • 1/2 cup firm tofu
  • 1 1/4 cups non-dairy milk
  • 1 tsp vanilla
  • 1/4 cup pure maple syrup
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 2 tablespoons purple syrup

Purple syrup

  • 1 cup purple water (reserved from potato boiling)
  • 1 cup sugar or 1 cup pure maple syrup

Preparation

  1. Boil the potato in the water for 10 minutes. Drain but save 1 cup of the purple water.

  2. Mash the potato in a glass, plastic, or ceramic bowl. Not metal because it'll actually change your purple color to a blue. Whisk in the other ingredients.

  3. Make your purple syrup by simmering the purple water with 1 cup sugar or pure maple syrup for 5 minutes. Store it in a glass Mason jar to pour on the waffles or to use as a natural food coloring. It'll get thicker as it cools.

  4. Pour 1/3 cup batter on an oiled waffle maker and cook for 8 minutes. It'll seem very soft right off the waffle maker, but it'll firm up if you store it in a 200°F oven while you make the rest. This makes about 8 waffles.
