Peanut Butter Chickpea Curry
Ingredients
- 1 tbsp extra virgin olive oil @crede_natural_oils
- 1 large garlic clove crushed
- 1 small red onion roughly diced
- 1 tsp paprika
- 1/2 tsp ground coriander
- 1/2 tsp cayenne pepper
- pinch chilli flakes/ smoked chilli flakes
- 1/2 can of coconut cream
- 2 tbsp peanut butter @ohmega_nutbutters
- 1 tbsp italian passata / tomato purée
- 400g tin of chickpeas drained
- 1 cube veg stock
- juice of half a lime
Preparation
Heat a medium pot with oil, add crushed garlic and red onion for a minute until softened
Add the paprika, cayenne pepper, ground coriander, pinch chilli flakes and mix
Now add the coconut cream, peanut butter, tomato puree, drained chickpeas, veg stock cube and juice of 1/2 a lime and stir
Cook on a high heat for 5-6 minutes until it starts to thicken
Take off the heat
Serve with rice and garnish with fresh parsley and lime
