Vegan Rainbow Bowl with Black Bean Patties
Ingredients
- baby spinach
- carrots
- rice colored with blue spirulina
- mushrooms
- zucchini
- radishes
- vegan sesame mayonnaise
Black bean pattie
- 1 can black beans (380g)
- 1/3 breadcrumbs
- 4 tbsp quinoa (uncooked)
- 1/3 cup tomato puree
- 1 tbsp olive oil
- 1 garlic clove
- 1 tsp black pepper
- 1 tbsp oregano
- 1 tbsp smoked paprika powder
- salt
Preparation
Cook the quinoa.
Drain and mash the beans with a fork.
Mix everything together, form patties and fry in a pan.
