Vegan Rainbow Bowl with Black Bean Patties

Ingredients

  • baby spinach
  • carrots
  • rice colored with blue spirulina
  • mushrooms
  • zucchini
  • radishes
  • vegan sesame mayonnaise

Black bean pattie

  • 1 can black beans (380g)
  • 1/3 breadcrumbs
  • 4 tbsp quinoa (uncooked)
  • 1/3 cup tomato puree
  • 1 tbsp olive oil
  • 1 garlic clove
  • 1 tsp black pepper
  • 1 tbsp oregano
  • 1 tbsp smoked paprika powder
  • salt

Preparation

  1. Cook the quinoa.

  2. Drain and mash the beans with a fork.

  3. Mix everything together, form patties and fry in a pan.
