Spiced Rajma Dal Stew

Ingredients

  • 1 tsp chilli powder
  • 1 tsp cumin
  • 1 1/2 tsp ground coriander
  • 1/2 tsp turmeric
  • 1/2 tsp ground fenugreek
  • 1 tbsp minced ginger
  • 2 tsp minced garlic
  • 1 tbsp tomato paste
  • 700g red kidney beans
  • 1 tin of chopped tomatoes
  • 1 red onion
  • Salt and pepper to taste

Garnishes

  • 2 tbsp cream
  • Pickled onions
  • Roasted cashews
  • Coriander

Preparation

  1. Toast the spices in a dry pan and set aside.

  2. Fry onions in olive oil for 5 minutes.

  3. Add garlic and ginger, then stir for a minute.

  4. Add spices and tomato paste, and cook for another minute.

  5. Add the tinned tomatoes and mix well.

  6. Add the beans and their juices.

  7. Bring to a gentle boil and let simmer until thick, about 20-25 minutes.

  8. Season to taste.

  9. Top with a drizzle of cream, pickled onions, cashews and coriander.

Tips

  1. This dish is perfect for winter and pairs well with rice or bread.
