Spiced Rajma Dal Stew
Ingredients
- 1 tsp chilli powder
- 1 tsp cumin
- 1 1/2 tsp ground coriander
- 1/2 tsp turmeric
- 1/2 tsp ground fenugreek
- 1 tbsp minced ginger
- 2 tsp minced garlic
- 1 tbsp tomato paste
- 700g red kidney beans
- 1 tin of chopped tomatoes
- 1 red onion
- Salt and pepper to taste
Garnishes
- 2 tbsp cream
- Pickled onions
- Roasted cashews
- Coriander
Preparation
Toast the spices in a dry pan and set aside.
Fry onions in olive oil for 5 minutes.
Add garlic and ginger, then stir for a minute.
Add spices and tomato paste, and cook for another minute.
Add the tinned tomatoes and mix well.
Add the beans and their juices.
Bring to a gentle boil and let simmer until thick, about 20-25 minutes.
Season to taste.
Top with a drizzle of cream, pickled onions, cashews and coriander.
Tips
This dish is perfect for winter and pairs well with rice or bread.
