Super Easy Vegan Apple Pie

Ingredients

Dough

  • 420g spelt flour (about 3 heaped cups)
  • 230g cold vegan butter (about 1 cup)
  • 0.5 tsp salt
  • 120ml (1/2 cup) cold water

Filling

  • 5 apples
  • 70g (1/2 cup) coconut blossom sugar
  • 1 tsp lemon juice
  • 1 pack vanilla sugar (or 1 tsp extract)
  • 1 tbsp ground cinnamon
  • 2 tbsp flour

Preparation

  1. Preheat oven to 210°C (410°F). Chop apples into small pieces. Add them to a large bowl and mix with the other ingredients for the filling.

  2. Add all ingredients for the dough in a separate bowl. Use either your hands or a kitchen aid to form the dough.

  3. Cut the dough in half and roll out one half on a floured surface. Transfer it to a pie form. Add the filling. Roll out the other half of the dough and cover the apples with it.

  4. Cut off any excess dough. You can use it to cut out some decorating leaves with a cookie cutter.

  5. Bake at 210°C for 20 minutes. Then turn the heat down to 160°C and bake for another 40 minutes. Eventually cover with tin foil so it doesn’t get dark.

  6. Enjoy.
