Tomato and Lentil Soup

Ingredients

  • 1 x pouch of Merchant Gourmet Tomatoey French Puy & Green Lentils
  • 1 white onion
  • 2 cloves of garlic
  • 1 litre of vegetable stock
  • 1 can of chopped plum tomatoes
  • 1 handful of finely chopped fresh basil
  • 2 tbsp. of paprika
  • 1 tsp. of turmeric
  • 1 tsp. of chilli powder
  • Pinch salt and pepper
  • Olive oil

Preparation

  1. Heat the olive oil in a large pan on a mid to low heat. Add the chopped onions and cook until translucent.

  2. Add the chopped garlic and cook for a further two minutes stirring occasionally. Then add the turmeric, chilli powder, paprika, lentils, vegetable stock and can of tomatoes.

  3. Stir, cover with a lid, reduce to a low heat and simmer for 10 minutes, stirring occasionally.

  4. Add the handful of chopped basil and stir through. Then serve.
