Vegan Pan-Fried Steamed Buns

Ingredients

Dough recipe

  • 240 g all-purpose flour or plain flour
  • 3 teaspoons sugar
  • 1 teaspoon instant yeast
  • 2/3 cup warm unsweetened plant-based milk or water
  • a pinch of salt
  • 1 teaspoon oil

Filling

  • 1 lb zucchini
  • 1 small carrot
  • 1/4 cup sliced mushrooms
  • 2 stalks scallions or green onions chopped

Filling's seasoning

  • 1 tablespoon soy sauce
  • 2 teaspoons toasted sesame oil
  • 1 teaspoon white pepper
  • 1/2 teaspoon salt

Other

  • chopped green onions
  • black and white sesame seeds
  • oil for cooking
  • salt

Preparation

  1. In a bowl, combine the dough ingredients and knead until a smooth dough forms, then cover and let it rise in a warm place for about 1 hour until doubled in size.

  2. Grate the zucchini and carrot, slice the mushrooms, and chop the scallions, then mix them together in a bowl.

  3. Add the filling's seasoning to the vegetable mixture and stir well to combine.

  4. After the dough has risen, divide it into portions, flatten each piece, add a spoonful of filling, and seal to form buns.

  5. Heat oil in a pan over medium heat, place the buns seam-side down, add a little water, cover, and steam for a few minutes until the bottoms are golden and crispy, then uncover and cook until done.

  6. Sprinkle with chopped green onions and sesame seeds before serving.
