Vegan Tofu Alfredo Pasta

Ingredients

  • 1 14 oz. block firm silken or soft tofu*
  • 1/4 cup melted vegan butter
  • 1/2 cup vegetable broth
  • 3 Tablespoons soy sauce or Bragg’s Liquid Aminos
  • 1/3 cup nutritional yeast
  • 2 cloves garlic
  • 1 teaspoon dried basil
  • 2 teaspoons onion powder
  • 2 Tablespoons lemon juice (or juice of 1 large lemon)

Preparation

  1. Cook 16 oz. of fettuccine pasta according to package instructions.

  2. Blend all ingredients until smooth.

  3. Sauté greens and your favorite veggies until slightly softened.

  4. Pour over 16 oz. of cooked fettuccine pasta and serve with sautéed greens and your other favorite veggies.
