Blue Porridge

Ingredients

  • 1 cup oatmeal
  • 1 3/4 cup rice coconut milk
  • 2 bags butterfly pea flower tea
  • 1 tbsp xucker light
  • 1 cup blueberry compote
  • 1 tbsp desiccated coconut
  • 1/2 peach
  • 1 tbsp chiapudding
  • edible flowers

Preparation

  1. Bring coconut rice milk to the boil

  2. Add tea bags and oatmeal and simmer 7-8 minutes, stirring once in a while

  3. Add xucker light (or sweetener of choice)

  4. In the meanwhile, grill peach and fill with chiapudding

  5. In a nonstick pan, toast desiccated coconut until golden brown

  6. Remove tea bags from the porridge, squeezing them slightly

  7. Tranfer porridge to a plate and add blueberry compote

  8. Top with the grilled peach, toasted desiccated coconut and edible flowers

  9. Enjoy
