Blue Porridge with Blueberry Compote and Flowers
Ingredients
- 1 cup oatmeal
- 1 3/4 cup rice coconut milk
- 2 bags butterfly pea flower tea
- 1 tbsp xucker light
- 1 cup blueberry compote
- 1 tbsp desiccated coconut
- 1/2 peach
- 1 tbsp chiapudding
- edible flowers
Preparation
Bring coconut rice milk to the boil.
Add tea bags and oatmeal and simmer 7-8 minutes, stirring once in a while.
Add xucker light or sweetener of choice.
Grill peach and fill with chiapudding.
Toast desiccated coconut in a nonstick pan until golden brown.
Remove tea bags from the porridge, squeezing them slightly.
Transfer porridge to a plate and add blueberry compote.
Top with the grilled peach, toasted desiccated coconut, and edible flowers.
