Blue Porridge
Ingredients
- 1 cup oatmeal
- 1 3/4 cup rice coconut milk
- 2 bags butterfly pea flower tea
- 1 tbsp xucker light
- 1 cup blueberry compote
- 1 tbsp desiccated coconut
- 1/2 peach
- 1 tbsp chiapudding
- edible flowers
Preparation
Bring coconut rice milk to the boil
Add tea bags and oatmeal and simmer 7-8 minutes, stirring once in a while
Add xucker light (or sweetener of choice)
In the meanwhile, grill peach and fill with chiapudding
In a nonstick pan, toast desiccated coconut until golden brown
Remove tea bags from the porridge, squeezing them slightly
Tranfer porridge to a plate and add blueberry compote
Top with the grilled peach, toasted desiccated coconut and edible flowers
