Blue Porridge with Blueberry Compote and Flowers

Ingredients

  • 1 cup oatmeal
  • 1 3/4 cup rice coconut milk
  • 2 bags butterfly pea flower tea
  • 1 tbsp xucker light
  • 1 cup blueberry compote
  • 1 tbsp desiccated coconut
  • 1/2 peach
  • 1 tbsp chiapudding
  • edible flowers

Preparation

  1. Bring coconut rice milk to the boil.

  2. Add tea bags and oatmeal and simmer 7-8 minutes, stirring once in a while.

  3. Add xucker light or sweetener of choice.

  4. Grill peach and fill with chiapudding.

  5. Toast desiccated coconut in a nonstick pan until golden brown.

  6. Remove tea bags from the porridge, squeezing them slightly.

  7. Transfer porridge to a plate and add blueberry compote.

  8. Top with the grilled peach, toasted desiccated coconut, and edible flowers.

  9. Enjoy!
