Vegan Gluten-Free Courgette and Carrot Pizza

Ingredients

  • 2 courgettes
  • 3 carrots
  • 1 1/2 cups gram flour
  • 1/4 cup nutritional yeast
  • 2 flax eggs (2 tbsp flax, 6 tbsp water)
  • Salt and freshly ground pepper

Toppings

  • Mixture of tomato purée and sundried tomato paste
  • Nutritional yeast
  • Your favourite vegetables

Preparation

  1. Process courgettes in a food processor or grate finely. Sprinkle with salt and leave to drain in a sieve for 10-20 mins.

  2. Finely grate carrots.

  3. Combine the carrots, courgette and all other ingredients and mix well.

  4. Spread on to 2 lined baking sheets.

  5. Bake for 10-15 mins at 200C or until the edges are starting to brown.

  6. Remove from the oven and spread the bases with a mixture of tomato purée and sundried tomato paste, sprinkle with nutritional yeast and then top with your favourite vegetables.

  7. Put back in the oven for a further 10 mins or until the toppings are cooked.

  8. Enjoy!
