Vegan Gluten-Free Courgette and Carrot Pizza
Ingredients
- 2 courgettes
- 3 carrots
- 1 1/2 cups gram flour
- 1/4 cup nutritional yeast
- 2 flax eggs (2 tbsp flax, 6 tbsp water)
- Salt and freshly ground pepper
Toppings
- Mixture of tomato purée and sundried tomato paste
- Nutritional yeast
- Your favourite vegetables
Preparation
Process courgettes in a food processor or grate finely. Sprinkle with salt and leave to drain in a sieve for 10-20 mins.
Finely grate carrots.
Combine the carrots, courgette and all other ingredients and mix well.
Spread on to 2 lined baking sheets.
Bake for 10-15 mins at 200C or until the edges are starting to brown.
Remove from the oven and spread the bases with a mixture of tomato purée and sundried tomato paste, sprinkle with nutritional yeast and then top with your favourite vegetables.
Put back in the oven for a further 10 mins or until the toppings are cooked.
