Creamy Veggie and Bean Alfredo over Brown Rice

Ingredients

  • Zucchini
  • Yellow squash
  • Cannelini beans
  • Onions
  • Peas
  • Carrots
  • Spinach
  • Brown rice

Creamy alfredo sauce

  • 1/3 cup raw soaked cashews
  • 1/2 to 1 cup unsweetened cashew milk
  • 2 tablespoons nutritional yeast
  • 1 teaspoon onion powder
  • 1/4 teaspoon garlic powder
  • Pinch of nutmeg
  • Salt and pepper to taste

Preparation

  1. Cook brown rice according to package directions

  2. Chop the vegetables into bite-sized pieces

  3. Sauté onions in a pan until translucent, then add zucchini, yellow squash, carrots, peas, and spinach; cook until tender

  4. If using canned cannellini beans, drain and rinse; add to the vegetables and heat through

  5. Blend the creamy alfredo sauce ingredients until smooth.

  6. Combine the cooked vegetables and beans with the sauce, stirring to coat evenly

  7. Serve the mixture over the cooked brown rice
