Mung Bean Vermicelli Noodle Bowl
Ingredients
- mung bean vermicelli noodles coloured with butterfly pea powder
- zucchini noodles
- edamame beans
- spinach
- carrot
- spinach & herb wraps
- lettuce
- falafels
- avocado
- black beans
- noodles
- edamame
- spinach-basil-kale pesto
Peanut soy sauce
- 1/2 cup soy sauce
- 1/4 cup peanut butter
- 1 tsp minced garlic
- 1/4 tsp minced ginger
- 2 tsp maple syrup
- 1/3 cup light coconut milk
Preparation
Blitz all peanut soy sauce ingredients together in a high speed blender.
Cook the mung bean vermicelli noodles according to package instructions
Prepare other bowl components as needed, such as chopping vegetables or heating pre-made items
Assemble all ingredients in a bowl, add spinach-basil-kale pesto, and drizzle with peanut soy sauce
