Mung Bean Vermicelli Noodle Bowl

Ingredients

  • mung bean vermicelli noodles coloured with butterfly pea powder
  • zucchini noodles
  • edamame beans
  • spinach
  • carrot
  • spinach & herb wraps
  • lettuce
  • falafels
  • avocado
  • black beans
  • noodles
  • edamame
  • spinach-basil-kale pesto

Peanut soy sauce

  • 1/2 cup soy sauce
  • 1/4 cup peanut butter
  • 1 tsp minced garlic
  • 1/4 tsp minced ginger
  • 2 tsp maple syrup
  • 1/3 cup light coconut milk

Preparation

  1. Blitz all peanut soy sauce ingredients together in a high speed blender.

  2. Cook the mung bean vermicelli noodles according to package instructions

  3. Prepare other bowl components as needed, such as chopping vegetables or heating pre-made items

  4. Assemble all ingredients in a bowl, add spinach-basil-kale pesto, and drizzle with peanut soy sauce
