Slow Cooker Ropa Vieja

Ingredients

  • 3 pounds beef chuck roast
  • 2 medium bell peppers,green and/or red
  • 1 small white onion
  • 1/4 cup red wine vinegar
  • 1/2 cup water
  • 4-8 cloves garlic
  • salt to taste
  • pepper to taste
  • Cut the peppers and onion into thin slices
  • and put half in the fridge

Preparation

  1. Place everything except the peppers and onions you put in the fridge into the slow cooker

  2. Cook everything on low for 6-8 hours, or until the roast starts to fall apart. Your house will start to smell of delicious ropa vieja about halfway in. DO NOT give in to the temptation to devour everything at this point; wait until it's done, and you can thank me later

  3. When the roast is ready (falling apart) carefully remove it from the slow cooker and place in a large bowl (or on a large plate). Shred the roast with two forks and place everything, including the juices, back into the slow cooker

  4. Add the refrigerated peppers and onions

  5. Cook on low for another 30 minutes to an hour

  6. Serve alone, or with some riced cauliflower. Enjoy
