Vegan Black Bean Meatballs with Tomato Sauce

Ingredients

  • 1 15 oz black beans
  • 1/2 tablespoon olive oil
  • 1 large clove of garlic, minced
  • 1/2 onion, chopped
  • 1 teaspoon oregano
  • 1 teaspoon basil
  • 1 tablespoon tomato paste
  • 1 teaspoon soy tomato sauce

Preparation

  1. Drain and rinse the black beans, then mash them in a bowl

  2. In a pan, heat the olive oil over medium heat and sauté the minced garlic and chopped onion until softened

  3. Add the mashed beans, oregano, basil, tomato paste, and soy tomato sauce to the pan and mix well to combine

  4. Form the mixture into small balls and place them on a baking sheet

  5. Bake in a preheated oven at 180°C for 20-25 minutes or until golden and firm

  6. Meanwhile, prepare a simple tomato sauce by heating additional tomato paste with water and seasonings if needed, or use a store-bought sauce

  7. Serve the meatballs with the tomato sauce
