Vegan Cauliflower No-Potato Salad
Ingredients
- 1 head cauliflower, chopped and lightly steamed
- 1/2 cup raw soaked cashews or raw soaked almonds
- 3 cloves fresh garlic
- 1/4 cup apple cider vinegar
- 1/2 cup chives
- Juice of 1 lemon, plus more to taste
- Pinch of Celtic sea salt or more
- Pinch of dill
- Few sprigs fresh mint
- 1 teaspoon ground flaxseed
Optional
- Chopped carrots
Preparation
Soak the nuts in water for a few hours or overnight until soft, then drain.
Lightly steam the chopped cauliflower until tender.
Place the drained nuts, garlic, apple cider vinegar, lemon juice, salt, dill, and mint in a blender and puree until smooth and creamy.
Add more lemon juice, garlic, and salt to taste until the desired flavor is achieved.
Pour the puree over the chopped cauliflower and chives and mix well.
