Vegan Cauliflower "No-Potato" Salad

Ingredients

  • 1 Head of Cauliflower Chopped Up (lightly steamed) - (#fiber)
  • 1/2 cup raw soaked cashews or raw soaked almonds (#protein ??)
  • 3 cloves of fresh garlic
  • 1/4 cup of apple cider vinegar
  • 1/2 cup of chives
  • The juice of 1 lemon – plus more to taste if you enjoy sour
  • Pinch of Celtic sea salt or more
  • Pinch of Dill
  • Few sprigs of fresh mint (ease of digestion)
  • 1 tsp ground flaxseed (omega boost!)
  • ⭐️Optional: Chopped up carrots

Preparation

  1. Place drained nuts, garlic, acv, lemon juice, salt, dill, and mint blender - puree until smooth and creamy

  2. Add in more lemon juice, garlic and salt to taste until you reach your perfect blend

  3. Pour puree on chopped cauliflower and chives - Enjoy
