Vegan Cauliflower "No-Potato" Salad
Ingredients
- 1 Head of Cauliflower Chopped Up (lightly steamed) - (#fiber)
- 1/2 cup raw soaked cashews or raw soaked almonds (#protein ??)
- 3 cloves of fresh garlic
- 1/4 cup of apple cider vinegar
- 1/2 cup of chives
- The juice of 1 lemon – plus more to taste if you enjoy sour
- Pinch of Celtic sea salt or more
- Pinch of Dill
- Few sprigs of fresh mint (ease of digestion)
- 1 tsp ground flaxseed (omega boost!)
- ⭐️Optional: Chopped up carrots
Preparation
Place drained nuts, garlic, acv, lemon juice, salt, dill, and mint blender - puree until smooth and creamy
Add in more lemon juice, garlic and salt to taste until you reach your perfect blend
Pour puree on chopped cauliflower and chives - Enjoy
