Vegan French Onion Soup
Ingredients
- 2 tablespoons vegan spread
- 2 onions
- 2 cloves garlic
- 1 1/2 teaspoons pink Himalayan salt
- 2 tablespoons balsamic vinaigrette
- 2 tablespoons red wine
- 1/2 teaspoon pepper
- 4 cups water
- 3 cups cubed baguette
- 1/2 cup vegan mozzarella
Preparation
In a large pot on medium heat add butter, onions, garlic, salt, pepper, balsamic vinaigrette, and wine. Cook for 5 minutes while frequently stirring
Lower heat to medium-low and let cook for 45 to 50 minutes
Add water to pot and stir well
Place soup in large ramekin, top with cheese and broil on 525 F for 3 minutes
Remove soup from oven, garnish with fresh chopped parsley and enjoy
