Vegan French Onion Soup

Ingredients

  • 2 tablespoons vegan spread
  • 2 onions
  • 2 cloves garlic
  • 1 1/2 teaspoons pink Himalayan salt
  • 2 tablespoons balsamic vinaigrette
  • 2 tablespoons red wine
  • 1/2 teaspoon pepper
  • 4 cups water
  • 3 cups cubed baguette
  • 1/2 cup vegan mozzarella

Preparation

  1. In a large pot on medium heat add butter, onions, garlic, salt, pepper, balsamic vinaigrette, and wine. Cook for 5 minutes while frequently stirring

  2. Lower heat to medium-low and let cook for 45 to 50 minutes

  3. Add water to pot and stir well

  4. Place soup in large ramekin, top with cheese and broil on 525 F for 3 minutes

  5. Remove soup from oven, garnish with fresh chopped parsley and enjoy
