Catalan Fishless Stew

Ingredients

  • tofu: 1 block pressed and cut in strips (and hasselback)
  • vegetable stock: 1 c
  • soya sauce: 1 t
  • nori: 2 t finely chopped
  • onions: 1 large
  • carrot: 1
  • fennel: 1/2 bulb
  • pepper: 1
  • potatoes: 3
  • tinned tomatoes: 1 can
  • cannellini beans: 1 can
  • vegetable stalk: 300ml made with 2 stalk cubes
  • white wine: 1 c
  • garlic powder: 1 t
  • vegan chorizo: 1/2 c chopped
  • pimentos de la vera or smoked paprika: 1 t
  • nori: 1 t finely chopped
  • saffron: 1/2 t
  • oil: 1/2 t
  • for paste:
  • almonds: 1/3 c
  • garlic powder: 1 t
  • lemon juice: from 1 lemon
  • parsley: 1 c
  • oil: 2 t

Preparation

  1. Marinate tofu in listed ingredients for at least 30 minutes

  2. Pan fry till crispy

  3. For catalan stew

  4. Make paste by blending all the listed ingredients

  5. Chop all the veggies. Heat olive oil to a pan and add all ingredients except than beans and saffron -Cover and cook till potatoes soften

  6. When potatoes begin to soften add beans, saffron and top with tofu fish -Cover and cook till potatoes are done
