Savory Vegan Chickpea Omelette Breakfast

Ingredients

  • 1/2 cup garbanzo bean flour
  • 1/2 cup plant milk
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon paprika
  • 2 tablespoons nutritional yeast
  • 2 tablespoons vegan cashew fiesta dip (optional)
  • zucchini
  • cauliflower
  • brussel sprouts
  • 1/3 cup water
  • coconut oil for spraying
  • 1/2 avocado for serving

Preparation

  1. Add chosen vegetables to a nonstick pan with 1/3 cup water, cover, and steam or cook until tender.

  2. Reduce heat to low, spray vegetables with coconut oil, pour the egg mixture over them, cover, and cook for 2-3 minutes. Then flip the omelette, cover, and cook for another 2-3 minutes.

  3. Serve with additional roasted brussel sprouts and half an avocado.
