Savory Vegan Chickpea Omelette Breakfast
Ingredients
- 1/2 cup garbanzo bean flour
- 1/2 cup plant milk
- 1/4 teaspoon sea salt
- 1/4 teaspoon garlic powder
- 1/4 teaspoon paprika
- 2 tablespoons nutritional yeast
- 2 tablespoons vegan cashew fiesta dip (optional)
- zucchini
- cauliflower
- brussel sprouts
- 1/3 cup water
- coconut oil for spraying
- 1/2 avocado for serving
Preparation
Add chosen vegetables to a nonstick pan with 1/3 cup water, cover, and steam or cook until tender.
Reduce heat to low, spray vegetables with coconut oil, pour the egg mixture over them, cover, and cook for 2-3 minutes. Then flip the omelette, cover, and cook for another 2-3 minutes.
Serve with additional roasted brussel sprouts and half an avocado.
