Chickpea Omelette

Ingredients

  • 1/2c garbanzo bean flour
  • 1/2c plant milk
  • 1/4tsp sea salt, garlic powder, paprika.
  • 2t nutritional yeast

Preparation

  1. Add your veg to a nonstick pan (i used zucchini, cauliflower, and brussel sprouts) + 1/3c of water with the top on to steam/cook the veggies

  2. Turn the heat down to low, spray the veg with coconut oil, and add your “egg” mixture overtop

  3. Cover the pan for ~2-3 minutes

  4. Flip, cover, and wait another 2-3min

  5. Served with roasted brussel sprouts and 1/2 an avocado
