Simple Low-FODMAP Coconut Raspberry Popsicles

Ingredients

  • 1/2 cup plant-based milk
  • 3 tbsp organic shredded coconut or coconut meat
  • 2 tsp maple syrup or 1/2 ripe banana
  • fresh berries

Preparation

  1. Add all ingredients to a blender and blend until smooth.

  2. Scoop the mixture into popsicle moulds, which can be found at most discount stores.

  3. Add fresh berries to the moulds.

  4. Insert a popsicle stick into each mould.

  5. Freeze for at least 4 hours, or preferably overnight for best results.
