Cookie Dough Pops

Ingredients

  • 1 1/2 cups raw cashews
  • 1/2 cup oat flour
  • 1 1/2 scant cups pitted dates
  • 1 tsp vanilla extract
  • 1/2 cup non dairy chocolate chips + more for melting

Preparation

  1. Add cashews and oats to the food processor and process until they form a fine flour

  2. Add our dates, and vanilla and process again until dough forms

  3. Put dough in bowl or on wax paper and mix chips in with you hands

  4. Using a teaspoon scoop cookie dough into your hands and roll into balls and insert lollipop stick or toothpicks Place on a wax paper lined baking sheet and set in fridge to chill

  5. Melt about 1/2 cup of additional chocolate and dip chilled cookie dough pops in chocolate

  6. Enjoy warm or place back in the in fridge to harden
