Cookie Dough Pops
Ingredients
- 1 1/2 cups raw cashews
- 1/2 cup oat flour
- 1 1/2 scant cups pitted dates
- 1 tsp vanilla extract
- 1/2 cup non dairy chocolate chips + more for melting
Preparation
Add cashews and oats to the food processor and process until they form a fine flour
Add our dates, and vanilla and process again until dough forms
Put dough in bowl or on wax paper and mix chips in with you hands
Using a teaspoon scoop cookie dough into your hands and roll into balls and insert lollipop stick or toothpicks Place on a wax paper lined baking sheet and set in fridge to chill
Melt about 1/2 cup of additional chocolate and dip chilled cookie dough pops in chocolate
Enjoy warm or place back in the in fridge to harden
