Croissant Frittata to Kick Off 2020

Ingredients

  • bacon (about half a pack)
  • 10 eggs
  • 1/2 cup almond milk
  • 1 cup shredded sharp cheddar
  • 2 teaspoons Dijon mustard
  • 1 teaspoon garlic powder
  • 1 teaspoon chili flakes
  • 1 teaspoon paprika
  • salt and pepper to taste
  • 5-6 large croissants

Preparation

  1. Cook and crumble about half a pack of bacon (can be done the night before).

  2. Preheat oven to 350 degrees Fahrenheit.

  3. Combine 10 eggs, 1/2 cup almond milk, 1 cup shredded sharp cheddar, 2 teaspoons Dijon mustard, 1 teaspoon garlic powder, 1 teaspoon chili flakes, 1 teaspoon paprika, salt, and pepper in a bowl.

  4. Tear 5-6 large croissants into pieces and place them into a greased baking dish.

  5. Pour the egg mixture over the croissants, cover, and bake for 30 minutes.
