Taco Seasoned Mince Beef Pie with Eggs and Cheese

Ingredients

  • 1 finely diced onion
  • 1 tsp olive oil
  • 500g 10% minced beef
  • 3 tsp ground cumin
  • 2 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp oregano
  • 1 tsp salt
  • 120g grated cheddar
  • 5 medium eggs
  • 160ml double cream

Preparation

  1. Fry 1 finely diced onion slowly in 1 tsp olive oil.

  2. Add 500g 10% minced beef and fry until browned.

  3. Add taco seasoning (3 tsp ground cumin, 2 tsp paprika, 1 tsp garlic powder, 1 tsp oregano, 1 tsp salt), stir through the mince and onion until mixed in and cook for a couple of minutes.

  4. Tip the mixture into an oven-proof dish.

  5. Top with 120g grated cheddar.

  6. Whisk 5 medium eggs with 160ml double cream and pour on top.

  7. Bake at 180°C for 35-40 minutes.

  8. Serve with salad and 2 tbsp Wicked Kitchen Dreamy Beetroot Dressing.
