Breakfast Pizza with Eggs and Spinach
Ingredients
- 1 whole wheat/sprouted grain personal size pre-baked pizza crust (I use Flatzza Buddy Crusts by @angelicbakehouse)
- Olive oil
- 2 large eggs
- 5 fresh spinach leaves, finely chopped
- Pinch of salt and pepper
- Shredded cheddar or mozzarella cheese
Preparation
Preheat oven to 400 degrees or as stated with your pizza crust.
In a small bowl, whisk together the eggs, salt, pepper, and chopped spinach.
Heat a light coating of olive oil in a nonstick pan over medium heat, ensuring the pan is slightly smaller than the crust.
Add the egg mixture and cook until about 75% finished, without scrambling or breaking up the egg.
Add a sprinkle of cheese to the pizza crust.
Using a spatula, carefully transfer the egg to the crust.
Top with a little more shredded cheese.
Finish in the oven until the egg is cooked and cheese is melted. Depending on the crust, you may need to pre-bake it as it only takes about 5-7 minutes.
Cut and serve.
Refrigerate leftovers for up to a week and reheat in oven.
