Crispy Zucchini Fritters with Onion and Garlic
Ingredients
- 600g Zucchini (4 small ones)
- 50g Yellow onion
- 65g All-purpose flour
- 5g Baking powder
- 1 Garlic clove
- Olive oil
- Salt and Pepper
Preparation
Wash the zucchini and grate them.
Place them in a colander, add 1 tsp of sea salt and stir.
Let sit for 30 minutes to drain the liquid.
Slice thinly the onion and garlic clove.
In a large bowl, mix the flour, baking powder and salt.
Squeeze the liquid out of the zucchini and add to the bowl, repeating until all zucchini is used.
Stir well to coat everything with the flour mixture.
Heat a saucepan over medium heat, add some oil.
Place a few tablespoons of the mixture in the pan to form a fritter.
Cook until both sides are golden.
