Easy Veggie Fritters with Carrot and Zucchini
Ingredients
- 1 medium carrot, grated
- 1 medium zucchini, grated
- 1 egg
- 6 Tbsp all-purpose flour
- 1/2 tsp garlic powder
- 1 tsp paprika
- 1 tsp ground cumin
- Salt and pepper to taste
Preparation
Drain as much water from the zucchini as you can and mix all the ingredients in a bowl to yield 5-6 fritters.
Heat olive oil in a pan and cook on each side for a few minutes.
Place on a baking tray and bake in the oven for 12-15 minutes.
