Easy Veggie Fritters with Carrot and Zucchini

Ingredients

  • 1 medium carrot, grated
  • 1 medium zucchini, grated
  • 1 egg
  • 6 Tbsp all-purpose flour
  • 1/2 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp ground cumin
  • Salt and pepper to taste

Preparation

  1. Drain as much water from the zucchini as you can and mix all the ingredients in a bowl to yield 5-6 fritters.

  2. Heat olive oil in a pan and cook on each side for a few minutes.

  3. Place on a baking tray and bake in the oven for 12-15 minutes.
