Veggie Fritters with Sriracha Mayo Dip

Ingredients

Fritters

  • 1 medium carrot, grated
  • 1 medium courgette, grated
  • 1 egg
  • 6 Tbsp all-purpose flour
  • 1/2 garlic powder
  • 1 tsp paprika
  • 1 tsp ground cumin
  • Salt and pepper to taste

Sriracha mayo dip

  • 1/4 tsp Garlic powder
  • 1 squeeze of fresh lime
  • 4tbsp Mayo
  • 1 tsp Sriracha

Preparation

  1. Drain as much water from the zucchini as you can and mix all the ingredients in a bowl and yield 5-6 fritters.

  2. Heat olive oil in a pan and cook on each side for a few mins.

  3. Place on a baking tray and bake in the oven for 12-15 mins.

  4. Mix all ingredients together for the Sriracha mayo dip and enjoy with the fritters.
