Veggie Fritters with Sriracha Mayo Dip
Ingredients
Fritters
- 1 medium carrot, grated
- 1 medium courgette, grated
- 1 egg
- 6 Tbsp all-purpose flour
- 1/2 garlic powder
- 1 tsp paprika
- 1 tsp ground cumin
- Salt and pepper to taste
Sriracha mayo dip
- 1/4 tsp Garlic powder
- 1 squeeze of fresh lime
- 4tbsp Mayo
- 1 tsp Sriracha
Preparation
Drain as much water from the zucchini as you can and mix all the ingredients in a bowl and yield 5-6 fritters.
Heat olive oil in a pan and cook on each side for a few mins.
Place on a baking tray and bake in the oven for 12-15 mins.
Mix all ingredients together for the Sriracha mayo dip and enjoy with the fritters.
