Grilled Salmon with Sweet Potatoes and Mushrooms
Ingredients
Sweet potatoes
- 2 sweet potatoes
- 1 tablespoon olive oil
- Salt and pepper to taste
Salmon
- 2 salmon fillets
- 1/2 tablespoon olive oil
- 1 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon cayenne pepper
- Salt and pepper to taste
Mushrooms
- 8 ounces mushrooms
- 1 tablespoon olive oil
- 1 tablespoon balsamic vinegar
- 1 teaspoon garlic
- 1/4 teaspoon black pepper
- 1/4 teaspoon salt
Preparation
Grease the grill before adding food to prevent sticking.
For sweet potatoes: Cut into rounds, add 1 tablespoon olive oil, salt, and pepper. Grill at 450°F for 10 minutes on each side.
For salmon: Mix spices (1 teaspoon paprika, 1/2 teaspoon garlic, 1/2 teaspoon onion powder, 1/4 teaspoon cayenne, salt, and pepper) in a small bowl. Brush salmon with 1/2 tablespoon olive oil, sprinkle with spice mixture, let marinate for 20 minutes. Grill for 5 minutes on each side at 450°F.
For mushrooms: Cut up mushrooms, add 1 tablespoon olive oil, 1 tablespoon balsamic vinegar, 1 teaspoon garlic, 1/4 teaspoon pepper, and 1/4 teaspoon salt. Let marinate for 20 minutes. Cook in an aluminum foil boat for 8 minutes, flipping halfway through.
