Grilled Salmon with Sweet Potatoes and Mushrooms

Ingredients

Sweet potatoes

  • 2 sweet potatoes
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Salmon

  • 2 salmon fillets
  • 1/2 tablespoon olive oil
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon cayenne pepper
  • Salt and pepper to taste

Mushrooms

  • 8 ounces mushrooms
  • 1 tablespoon olive oil
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon garlic
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt

Preparation

  1. Grease the grill before adding food to prevent sticking.

  2. For sweet potatoes: Cut into rounds, add 1 tablespoon olive oil, salt, and pepper. Grill at 450°F for 10 minutes on each side.

  3. For salmon: Mix spices (1 teaspoon paprika, 1/2 teaspoon garlic, 1/2 teaspoon onion powder, 1/4 teaspoon cayenne, salt, and pepper) in a small bowl. Brush salmon with 1/2 tablespoon olive oil, sprinkle with spice mixture, let marinate for 20 minutes. Grill for 5 minutes on each side at 450°F.

  4. For mushrooms: Cut up mushrooms, add 1 tablespoon olive oil, 1 tablespoon balsamic vinegar, 1 teaspoon garlic, 1/4 teaspoon pepper, and 1/4 teaspoon salt. Let marinate for 20 minutes. Cook in an aluminum foil boat for 8 minutes, flipping halfway through.
