Spicy Salmon Tacos with Bacon and Sweet Potatoes

Ingredients

Salmon

  • 1 fillet of salmon
  • 1 tsp garlic powder
  • 1/2 tsp smoked paprika
  • 1/2 tsp Chipotle powder
  • 1/4 tsp sea salt

Sweet potatoes

  • 3 sweet potatoes
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp sea salt
  • 1/2 tsp smoked paprika
  • 1/2 tsp Chipotle powder

Bacon

  • Bacon

Accompaniments

  • Tortillas
  • Guacamole
  • Salsa

Preparation

  1. Preheat oven to 425°F

  2. Sprinkle the garlic powder, smoked paprika, Chipotle powder, and sea salt on the salmon fillet and bake for 12-14 minutes depending on thickness.

  3. Cut sweet potatoes into cubes, mix with olive oil, garlic powder, onion powder, sea salt, smoked paprika, and Chipotle powder, then bake at 425°F for 40 minutes, flipping halfway through.

  4. Bake bacon on parchment paper at 425°F for 15-18 minutes.

  5. Assemble the tacos by placing the baked salmon, sweet potatoes, and bacon in tortillas, and top with guacamole and salsa
