Lemon and Mint Sea Bass

Ingredients

  • 3 whole Sea Bass (or use fillets)
  • 6 tbsp olive oil
  • 6 garlic cloves, crushed
  • juice and zest of 1 lemon + extra lemon for garnishing
  • a handful of parsley/mint
  • 1.5 tsp dried mint OR mint sauce
  • 1 tsp coarse black pepper
  • 1 tsp salt (adjust to taste)

Preparation

  1. Remove the scales and fins from the Sea Bass and clean well. Use a sharp knife to score the flesh either side of each fish.

  2. In a bowl mix all of the above ingredients to create a paste, alternatively blend the ingredients in a blender to create a smoother paste which you can brush on.

  3. Apply or brush the paste onto the fish, ensuring to apply paste to the scored flesh and inside. Slice up some lemon and add to the insides of each fish. Grill under the grill or broiler until the fish is cooked all the way through and skin is crispy.

  4. Serve as a starter to a main meal or enjoy with couscous or a hearty salad as a main meal.
