Roasted Red Pepper and Tomatoes with Juices
Ingredients
- 1 red pepper
- dash of olive oil
- garlic cloves
- cherry tomatoes
- salt
Preparation
Preheat oven to 180°C.
Place a red pepper in a baking dish with a dash of olive oil and bake for 20 minutes.
Add garlic cloves, cherry tomatoes, and salt to the dish.
Bake for another 20 minutes.
Remove from oven, cut open the pepper, and remove the seeds.
Adding salt degorges the tomatoes, removing excess liquid to create flavorful juices.

Use the collected juices as a topping for soup or as a salad dressing.
Dip bread into the olive oil infused with tomato and garlic flavors.
