Herb Crusted Salmon with Broccoli Rice Dinner
Ingredients
- Salmon fillet (enough for 4 portions)
- 1/2 cup panko breadcrumbs
- 1/2 cup finely chopped parsley
- 1/3 cup grated Parmesan
- 2 grated garlic cloves
- Zest of 1 lemon
- Pinch of salt
Preparation
Preheat the oven to 180C
In a large bowl mix together all ingredients except salmon
Firmly press the mix on top of the salmon
Bake for 15-18 minutes. Exact time depends on salmon thickness and desired doneness
Cook broccoli in boiling water for 2 minutes
Blitz the broccoli in a food processor
Stir the blitzed broccoli through cooked rice
Note: For individual salmon fillets, reduce cooking time by about 5 minutes
