Herb Crusted Salmon with Broccoli Rice Dinner

Ingredients

  • Salmon fillet (enough for 4 portions)
  • 1/2 cup panko breadcrumbs
  • 1/2 cup finely chopped parsley
  • 1/3 cup grated Parmesan
  • 2 grated garlic cloves
  • Zest of 1 lemon
  • Pinch of salt

Preparation

  1. Preheat the oven to 180C

  2. In a large bowl mix together all ingredients except salmon

  3. Firmly press the mix on top of the salmon

  4. Bake for 15-18 minutes. Exact time depends on salmon thickness and desired doneness

  5. Cook broccoli in boiling water for 2 minutes

  6. Blitz the broccoli in a food processor

  7. Stir the blitzed broccoli through cooked rice

  8. Note: For individual salmon fillets, reduce cooking time by about 5 minutes
